How to make awesome Low Carb Crock Pot Pizza

This is from www.yourlighterside.com and as soon as I saw it, I knew we’d be giving it a try. Seriously, just pre-cook the meats, assemble everything in a crockpot and 4 hours later you end up with an amazing, deep-dish, crust-less low-carb pizza, right? Well, mine didn’t hold together into a ‘pizza slice’ when removed from the crockpot — maybe because my slow cooker is only 5 litre (5.3 qt) and this calls for a 6 qt size, so it was a bit deeper. But hubby and I didn’t care about the shape; this was so amazingly tasty that it’s already on our favourites list. I hope you love it as much as we did.

Ingredients:
.75 lb (340g) ground beef, cooked
.75 lb (340g) bulk Italian sausage, cooked (I used spicy Sicilian sausage)
1-15 ounce (425g) jar pizza sauce (no sugar)
3 cups mozzarella cheese, shredded
3 cups fresh spinach (I used kale)
16 slices pepperoni
Toppings (optional, whatever your faves are):
(those with * were included in nutritional information)
1 cup olives, sliced*
1 cup mushrooms, sliced*
1/2 green pepper, chopped*
1/2 cup sweet onion, chopped*
1/4 cup marinated artichoke hearts, chopped
1/4 cup sun-dried tomatoes, chopped
2 cloves garlic, minced*

Method:
Combine cooked sausage and hamburger with the pizza sauce and onions (I mixed the onions in with the other toppings, and stirred the garlic through the meat and sauce, but you can put this together in any order really, it won’t matter).
Place half of sauce mixture in crock pot. Place half of fresh spinach (or kale) on top of sauce mixture. Spread half the pepperoni and half your chosen toppings over the top. Add half of mozzarella cheese.
Repeat the layers, ending with mozzarella. Cook on low 4-6 hours. Let cool slightly and cut into 8 slices (or just scoop it out, it’s just as tasty either way).

Makes 8 slices. Nutritional Information Per Serving: Calories: 487, Carbohydrates: 7.6g, Fiber: 2, Net Carbohydrates: 5.6g, Protein: 30g, Fat: 37g
